Not for a new installation; when replacing an existing system an outage window is planned and written into the contract. Most cutovers complete with under an hour of downtime.
Architecture diagram, IP and VLAN plan, configuration dump, admin account list (passwords in a secure vault), operations manual and rollback plan.
Priority support from the installing team for 30 days after go-live; fine-tuning and small fixes are free during this period.
Optionally under a managed services contract; the team that did the installation continues with operations.
